Mineral Broth Base
A simple broth to start the week and repurpose across multiple meals.
Use this as a base for soups, grains, or a mid-afternoon warming cup.
Ingredients
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 strip kombu
- 8 cups water
- 2 bay leaves
- 1 tsp black peppercorn
Method
- Add all ingredients to a pot and bring to a gentle boil.
- Reduce to a low simmer for 35 minutes.
- Remove kombu at 20 minutes to prevent bitterness.
- Strain, cool, and store up to 4 days.
