Herbed Salmon Rice

Sheet-pan salmon with dill rice and cooling cucumber yogurt.

A simple protein-forward dinner that still feels light and clean.

Ingredients

  • 2 salmon fillets
  • 1 tbsp olive oil
  • 1 cup cooked jasmine rice
  • 2 tbsp chopped dill
  • 1/2 cucumber, diced
  • 1/2 cup Greek yogurt
  • 1/2 lemon, juiced

Method

  1. Roast salmon at 425°F for 10 to 12 minutes with olive oil and salt.
  2. Warm rice and fold in dill.
  3. Mix yogurt, cucumber, lemon, and a pinch of salt.
  4. Serve salmon over rice with cucumber yogurt spooned on top.
