Herbed Salmon Rice
Sheet-pan salmon with dill rice and cooling cucumber yogurt.
A simple protein-forward dinner that still feels light and clean.
Ingredients
- 2 salmon fillets
- 1 tbsp olive oil
- 1 cup cooked jasmine rice
- 2 tbsp chopped dill
- 1/2 cucumber, diced
- 1/2 cup Greek yogurt
- 1/2 lemon, juiced
Method
- Roast salmon at 425°F for 10 to 12 minutes with olive oil and salt.
- Warm rice and fold in dill.
- Mix yogurt, cucumber, lemon, and a pinch of salt.
- Serve salmon over rice with cucumber yogurt spooned on top.
