Ingredients
- 8 oz mild chicken or turkey sausage, sliced
- 1 tbsp olive oil
- 3 cups low-sodium broth
- 1 can white beans, rinsed
- 2 handfuls spinach or kale
- 1 garlic clove, minced
- 1 tsp lemon zest
Method
- Brown sausage in olive oil over medium heat, 4 to 5 minutes.
- Add garlic and stir 30 seconds.
- Add broth and beans, simmer 8 minutes.
- Stir in greens for 2 minutes until wilted.
- Finish with lemon zest and serve hot.
