Brothy Sausage

Easy weeknight dinner with soft greens, white beans, and bright lemon broth.

Ingredients

  • 8 oz mild chicken or turkey sausage, sliced
  • 1 tbsp olive oil
  • 3 cups low-sodium broth
  • 1 can white beans, rinsed
  • 2 handfuls spinach or kale
  • 1 garlic clove, minced
  • 1 tsp lemon zest

Method

  1. Brown sausage in olive oil over medium heat, 4 to 5 minutes.
  2. Add garlic and stir 30 seconds.
  3. Add broth and beans, simmer 8 minutes.
  4. Stir in greens for 2 minutes until wilted.
  5. Finish with lemon zest and serve hot.
